About Mayumi Nagata

Mayumi has been an exquisite pastry chef for almost 15 years.  Very interested in French pastry, Mayumi has worked in Japan, France and Singapore. She has lived and worked in France for 4 and half years with the most skilled of chefs and trained in 3 stars restaurant in south region.

Mayumi loves what travelling has to offer for foods – it  introduces her to many varieties and combinations of foods in each region.  Traveling has also given her to opportunity to meet a variety of different people and other chefs who have inspired her with new ideas and flavour combinations.

Growing up, Mayumi’s mother prepared all the food and her father grew the family’s fruit and vegetables in the garden. Food was a main feature in the family – home grown and preparing home cooked meals. Her mother was not a professional cook but everything was prepared with patience, care and love and this is where Mayumi discovered her love and connection with food.

When Mayumi lived in France and Singapore, she met Chinese chefs who taught her how to cook and eat ‘their way’.  Mayumi used her culinary background and love and interest in food to mix a few of those ideas with her own!

Mayumi enjoys making and eating dumplings because of friendly atmosphere it creates,  of making dumplings together as a family. In Chinese and Japanese culture, traditionally, having dinner used  to be main event of the day. Making dumplings allows that feeling to be recreated.

Learn to make a variety of delicious tapas dishes. Create your own Mixed Paella, choosing from chicken, chorizo, calamari, prawns, salmon and mussels or have them all! We serve Churros to finish and of course a glass of house made sangria!

Spanish cuisine is traditionally enjoyed communally with friends and family,  of course with some fantastic homemade sangria to compliment the meal!  Spanish food uses fresh and seasonal ingredients, and simple recipes to create incredible dishes that can be enjoyed as appetizers or complete meals.

A traditional way of serving food in Spain is as Tapas, which are a selection of of different types of food served in smaller portions for everyone to graze upon.

During this Spanish cooking class you will make an array of traditional Spanish Tapas dishes including Pan Con Tomate, Romesco and the flavourful Tortilla Española, a Spanish Omelette-like potato dish, with gorgeous caramelised onion and feta.

Our Chef will guide you through making your own perfect Paella, a gorgeous and flavourful traditional Spanish rice dish.  In pairs create your own Mixed Paella, choosing from chicken, chorizo, calamari, prawns, salmon and mussels (or have them all!).

Once all the cooking is complete, sit down to dine with a glass of homemade sangria followed by some delicious Churros served with warm chocolate sauce for dessert.

This is a fantastic and informative course, perfect for all ability levels from beginner to intermediate! Learn proper knife skills, interesting entrees, impressive mains and delicious desserts! One night a week for 4 weeks, class 2.5 hrs.

About the Adult Beginner Course

Our 4 week Adult Beginner Cooking Course, is held 1 night a week for 4 consecutive weeks* at 6:30pm - 8:30pm. The class will be held on the same evening for 4 weeks (e.g four Tuesdays in a row) for approximately 2 hours to 2 hours 15mins.

This is a fantastic and informative course, taught in a fun and friendly environment. Perfect for those starting out in the kitchen to those already doing quite a bit of cooking but interested in more efficient and creative ways of doing things and some new ideas.

During this hands-on and informative class you will learn and prepare your own dishes. Each person is provided with their own cooking station and all knives, utensils, equipment and ingredients will be provided for use during the class.  During the class participants are provided with tasters of some of the food and some dishes will be available to take home.


What happens during each class?

Each class will focus on a different area of the meal, beginning with basic knife skills & safety, quinoa and rice, eggs, salads and sides then progressing through Entrees, Mains & Desserts.  Learn to cook 4-5 dishes each week cooking with proteins such as chicken breast, salmon fillet, lamb rack, duck breast, steak. 

From the correct way to chop an onion and making your own mayonnaise from scratch, cooking beautiful eggs a variety of ways, from pan-frying to roasting, from pasta from scratch to coking the perfect steak, from scallops to chicken, or a fabulous 3 course meal to impress at your next dinner party – the Adult Beginner Course will provide you with the skills and confidence you need to excel in your home kitchen.


How many participants will be in each class?

Classes are kept small (roughly 10-14 people) so that everyone maximum attention, support and benefit from the class in a friendly and comfortable environment. Be inspired by our 2 fabulous Head Chefs – Brett & Paul as they teach you the basic skills which you can build and practice upon each week right through to impressive and delicious meal preparation.


Extra Support

All recipes will also be provided to take home.  Try your dishes at home and if you have any trouble, feel free to give us a call and our lovely chefs will be sure to help you out!  And if there is anything in particular you’ve always wanted to know – feel free to ask the chefs. The chefs are always happy to be guided by you – if there is something you’ve always wanted to learn – chances are some one else might want to learn it too!

Each week we will teach a variety of creative dishes – including Entrees, Mains and Share Plates great for cooking at home or catering for your next dinner party!

You will learn 4-5  fabulous dishes depending on the complexity and cooking time, building on your skills and experience.

During this hands-on and informative class you will learn and prepare your own dishes (Please note some dishes will be demonstrated by the Chef).  All equipment and ingredients are provided for use during the class. Sample your creations here and take the rest home for later!

This class is suitable for those with an intermediate level of experience in the kitchen and avid home cooks. For those starting out in the kitchen, try our Adult Beginner Course (4 weeks).

Recipes will be provided to take home. Class sizes are limited to 10 guests to maximise personal attention so that everyone benefits from the class.

In the event a student needs to cancel a booked class, please give us as much notice as possible. More than 7 days notice the option to reschedule to another class is available  (subject to availability within that class).  

Within 7 and no later than 3 business days notice, please be aware there is a $45 administrative charge per person to reschedule your class.  

Cancellation within 48 hours of the class, 
the full amount of the class will be forfeited and no option to reschedule will be available (the class is transferable to another person otherwise the class is forfeited).  

During December
 the cancellation of any function or class for December will be non-refundable.

A minimum of 6 participants is required to run a scheduled class. In the event that minimum numbers are not reached, Sydney Cooking School reserves the right to reschedule the class. These school holidays enjoy a hands on Dumplings class & book reading of A Fearsome Beast And A Dumpling Feast, a new children’s book series that follows siblings, Clementine & Aksel. Thursday 6th July, 2:30pm, Ages 5-7.

Kids, these school holidays enjoy a delightful book reading of A Fearsome Beast And A Dumpling Feast by Yves Stening, a wonderful tale that follows siblings, Clementine & Aksel as they travel back in time and around the world, uncovering magical stories behind the food we eat every day.


After the story take part in a hands on Dumplings cooking class with the chefs of Sydney Cooking School and make your own dumplings as featured in the book.


Each child will receive a copy of of A Fearsome Beast And A Dumpling Feast to take home.


Thursday 6th July at 2:30pm-3:30pm.
