You’ll then bring your creations to life with a range of classic fillings and finishes, including silky pastry creams, vibrant fruit elements and smooth, professional glazes.

  • Vanilla & Raspberry Choux with vanilla pastry cream, raspberry confit and chantilly
  • Chocolate Éclairs with rich chocolate pastry cream and glossy glaze
  • Coffee Éclairs (Religieuse-style) with coffee pastry cream and chantilly
  • Chouquettes with pearl sugar

Along the way, you’ll learn how to prepare key patisserie elements including craquelin, pastry creams, chantilly and fruit confits — giving you a strong foundation to recreate and customise these pastries at home.
